Mexican Chilaquiles with Chicken

Chilaquiles with Chicken

Ingredients

12 Corn tortilla

2 cups shredded cooked chicken

1 cup Poblano Peppers sauce

1/2 cup shredded Mozarrela Cheese

1/2 cup sour cream

The Corn tortilla:

Cut the tortillas in four(triangles )

then deep fry the tortillas triangles .

set a side.

Poblano Peppers Sauce:

1/2 lb Poblano Peppers.

2 tablespoons vegetable oil

1/4 onion, finely chopped

Salt to taste

Garlic.

Directions

Roast the poblano peppers in a skillet.

skin the peppers.

Blend the peppers until a smooth sauce

Heat the 2 tablespoons of oil in a medium saucepan over medium heat.

be careful when you ad the sauce in the saucepan the oil may Jump

Add the Pobano Peppers and onions with a spun slowly .

Season with salt and Garlic.

Bring to a simmer for five minutes.

Preheat oven to 350 degrees.

Spread the corn tortilla triangles over the bottom of baking dish.

cover with the Poblano Peppers sauce

Place the chicken on top and again Poblano Peppers Sauce.

Spread sour cream over the chicken and Poblano Peppers Sauce

Then top with cheese.

Cover with another layer of corn tortilla triangles.

again top with the Poblano Peppers sauce only.

Then top with cheese.

bake for 10 minutes or until the Cheese is melted.

serve.

(If prepared ahead of time, the sauce may make the corn tortilla soggy. Assemble right before baking.)
